NB: Heat loss occurs through the viewing window in the top of the machine; so we recommend for everyone to put a few layers of Aluminium foil over the window. Hints: Use lukewarm water in winter as the machines do not have a pre-kneading warming cycle (Some brands do). However for optimum results use the Medium Loaf recipe using 500g of bread mix (it claims to make a 1kg loaf, but this is very heavy and sticky). Reduce water (up to 50ml less than general recommendation) to assist with dough development. We have found that the French Setting produces the biggest and best loaf; also with a Dark Crust setting. Contrary to Breville we highly recommend 500g bread mix to avoid dough falling onto element and creating potential fire hazard. This has turned out to be a bit of a disaster for me. I have tried Laucke gluten free mix twice and that rised until baking, then it flopped. This was using dough and bake settings like Laucke recommends. I have reduce the amount of water the second time too. I am going to try the recipe that comes in the book but I found in Darwin, it is very hard to find Potato flour and soy flour. Is there any other recipe that you could recommend without these 2 types of flour. www.kappapma.com/userfiles/files/canon-mp520-repair-manual.pdf

All the gluten free bread recipes have milk powder in them and the recipe says it's very important to follow exactly. Is there another ingredient I can replace with the mill powder. Thanks, the Breville team Like Report Breville Breville 5 years ago Hi Sally - the milk powder is there to enrich the flavour. Here are some alternatives from the test kitchen: Almond meal Coffee mate (which is gluten free) Dry rice milk powder Dry soy milk powder Nut flours These might absorb the water at a different rate to the milk powder but probably not significantly so, but check the consistency of the dough. Start with one of the milk powders first as it the closest substitute and do a direct weight for weight substitute. Hope this helps. The Breville team Like Report Zibby asked 5 years ago I just bought this bread maker a few weeks ago and I enjoy to making bread with the dough function mostly because I found that did not bake the crust that I want ever. Not very happy with it but mostly of the problem is the stop button never works??? So if I chooses the wrong function I want and I can't change it not even turned off the power and wait and wait and wait sure more than 5 mins but it will still on the wrong program I choosed and I could not stop it or change it ever??? I am so so so confuced that is it the machine decided like it or I just got the broken one?? Pls pls help me? Like Share More 4 answers Jerrycan 5 years ago If I were you I would take it back while it is under warranty. I am pretty sure the STOP button worked for me. Seemed to remember you have to hold it down for a few seconds though not really sure as mine died a while back. As far as the crust goes, I did find I had to experiment with the amount of fluid that I actually needed to add as the instructions with the machine and recommendations on the flour mix were guidelines only. The dough consistency is crucial. Like Report gayle wilson 5 years ago I found the same with the stop button. Maybe Breville will reply. Is it worthwhile or are we wasting our time and bench space. Thanks! Like Share More 1 answer Jerrycan 5 years ago I have found the low purchase price is reflected in low reliability, high cost of spare parts. So when it breaks down after about a year it gets thrown. The loaves it made were quite good but in the end I used it mainly for making the dough for naan bread and wholemeal pizza bases. There are not many cheaper but I think there is better value out there. Like Report twin2 asked 5 years ago what size will the loaf be (how wide) as I am looking to buy a slicing guide. Like Share More 2 answers Oz 6 years ago yes, this is the downside of baking in the breadmaker some machines have folding paddles i prefer to make dough in breadmaker then transfer dough to another pan and bake in regular oven Like Report BreadBoy 5 years ago It is possible to remove the paddle after the beep that indicates the final mix has been completed. A small amount of cooking spray on the shaft before you first put the paddle on will help the removal of it, and the bread will have a very small hole the size of the shaft in the bottom. I always do this if I'm around when the buzzer goes off. It just won't rise and the centre is dense. Very frustrating having to throw away every time it did not turn out well. Is there something that I did that was incorrect. Any help is appreciated. Been using Laucke pre mixed bread mix. Tastes great, but the top looks like the Rock of Gibraltar. Have made a sour dough loaf today and the top of this one is quite sunken. Am wondering if this is a yeast problem. Yeast supplied with the product, does not say to refrigerate after opening, but even the first loaf is very uneven. There are four packets supplied and yeast enough for all. Have used Laucke multigrain soy and linseed, still a very rugged top, Gemma Like Share More 5 answers Frustrated Baker 6 years ago Gemma, You do not indicate whether you are using Lauke Gluten Free mix. When I spoke to the receptionist at Laucke she indicated that that mix was not designed for a breadmaker. A relative in the country has great success with the ordinary multigrain Laucke mix. We have only made a few loaves yet. The Coeliac Society Serrol flour has baking powder in it and (no yeast) and at this stage it only rises about half the height that it did in our old Sunbeam before it died after ten years use. As the Serrol flour contains sodium it is building up in my blood so am experimenting with various recipes containing yeast. So far all we have are like bricks. Regards, Peter Like Report Gemma 6 years ago Thank you Peter. I am not using gluten free. Just normal product, by Laucke. Following directions in Breville book for my machine, BBM800. I use the machine to do my mixing of dough for foccacia and pizza. The booklet is about 50-60 pages long, but I also email them with any questions I have. Phil Like Report Christine asked 6 years ago Hi everyone, I’ve just purchased a Breville BBM100 Baker's Oven - I’m just checking if the bread bin is simply to be pulled out. Or does it have some kind of release mechanism. It seems to be very difficult to remove. I’m wondering if it will loosen up over time. I don’t want to break it. Thanks! Like Share More 2 answers Bobbindale 6 years ago There is no release mechanism, but there are two clamps that hold the bread pan(bin) in place. If you lift up the handle of the bread pan, you should be able to pull the bin straight up. You will note the two clamps, one either side of the bin near the hinges of the handle. When you get the bin out and fill it up with recipe, you must then ensure the bin is back down securely into these clamps so that it clicks into position. Call or email Breville as per the back of the Bakers oven manual. I email the bread mix companies as well when I need answers.
